Decarboxylation

Infusion
¾ cup (170 g) unsalted European-style butter + ½ tsp liquid sunflower lecithin
Melt to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours
Strain hard → crystal-clear 360 mg THC butter
Cookie Dough
All 360 mg THC butter, softened
½ cup (100 g) granulated sugar
Zest of 3 limes
1 tsp vanilla extract
½ tsp fine salt
1¾ cups (210 g) all-purpose flour
1 cup (80 g) toasted unsweetened shredded coconut (pulse briefly for finer texture)
Coating
1½ cups (180 g) powdered sugar
Steps
1. Cream THC butter + sugar + lime zest + vanilla + salt until light and fluffy.
2. Mix in flour + toasted coconut just until dough forms → chill 1 hour (easier to roll).
3. Preheat oven to 350 °F → roll dough into 1-inch balls (24 total) → place on parchment-lined sheet.
4. Bake 12–15 minutes until edges lightly golden (centers stay pale) → cool 5 minutes on sheet.
5. While warm: roll in powdered sugar → cool completely → roll again for thick snow coating.
