Infusion
1 can (400 ml) full-fat coconut milk + ½ tsp liquid sunflower lecithin
Warm to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours
Strain hard → crystal-clear 360 mg THC coconut milk
Sticky Rice Base
All 360 mg THC coconut milk
1½ cups (300 g) glutinous rice (sweet rice, soaked overnight)
½ cup (100 g) granulated sugar
2–3 tsp pandan extract (or fresh pandan paste)
Pinch fine salt
Optional: toasted sesame seeds or shredded coconut for rolling
Steps
1. Drain soaked rice → steam 25–30 minutes until tender (bamboo steamer or rice cooker steam mode).
2. Warm THC coconut milk + sugar + pandan extract + salt until sugar dissolves → pour over hot steamed rice → stir well → cover and rest 20 minutes (rice absorbs fully).
3. Cool mixture slightly → roll into 24 balls/bites (wet hands prevent sticking).
4. Optional roll in toasted sesame or coconut for texture.
