Detroit Coney Dog Chili Cheese Fries with THC-Infused Koegel Viennas (60 mg each)


This is the plate that ends every night in the D and starts a few police reports. Hand-cut russet fries double-fried until they could break a window, smothered in a heartbreaker Coney chili made with ground beef heart, suet, and a secret blend of spices, then buried under a snowbank of shredded sharp cheddar, diced white onion, yellow mustard squiggles, and two whole THC-infused Koegel Viennas sliced on the bias. The dogs alone carry 720 mg total, so every greasy forkful is a one-way ticket to 3 a.m. Lafayette Coney Island hallucinations.


Serves 12 very real portions (or 6 absolute legends)  

Active time: 2½ hours | Total time: 5 hours + 10-day infusion  

Dosage: 60 mg THC per portion (720 mg total in the hot dogs)


THC Koegel Viennas (720 mg total)  

- 12 Koegel Viennas (the real Detroit ones with natural casing)  

 0.7 oz flower testing 22 % THC → decarb 237 °F 57 min  

 Simmer the decarbed flower in 3 cups water + 2 tbsp sunflower lecithin at 195 °F for 3 hours, strain hot through coffee filter → chill to cold “canna-water”  

 Vacuum-seal the 12 dogs with the cold canna-water and sous-vide at 165 °F for 4 hours. Shock in ice bath. Dogs now contain exactly 720 mg usable THC (60 mg per dog). Keep cold until the final sear.


Coney chili (no beans, ever)  

- 1 lb beef heart, trimmed and ground fine  

- 1 lb 80/20 ground beef  

- ½ lb beef suet, ground  

- 1 large onion, grated  

- 4 cloves garlic, minced  

- 3 tbsp chili powder  

- 2 tbsp paprika  

- 1 tbsp cumin  

- 1 tbsp yellow mustard powder  

- 1 tsp cayenne  

- 1 tsp allspice  

- ½ tsp cloves  

- 2 cups beef stock  

- Saltine crackers, crushed (binder)  

- Salt & cracked black pepper


Brown meats hard, add onion and garlic, cook until sweet. Add spices, toast 2 min. Deglaze with stock, simmer low 90 minutes until thick as wet sand. Stir in crushed crackers at the end for body. Keep warm.


Fries & assembly  

- 6 lb russet potatoes, cut ⅜-inch batons, soaked overnight  

- Fry #1 at 300 °F 5–6 min (blanch)  

- Fry #2 at 375 °F 3–4 min until violently golden  

- Hit the hot dogs hard on a flat-top until blistered and snapping  

- Pile fries high in 12 cast-iron skillets or paper boats  

- Two big spoons chili  

- Avalanche of hand-shredded extra-sharp cheddar  

- Sliced THC Koegels on top  

- Raw white onion dice  

- Mustard squiggles  

- One more dusting of chili for disrespect


Serve with a stack of forks because nobody has ever eaten these neatly.

Eat two and you’ll wake up in the Cass Corridor trying to tip the Spirit of Detroit statue with singles.
