Cannabis-Infused Emerald Chocolate Dipped Matcha Macaron Sandwiches
Macarons are delicate, elegant, and perfectly portion-controlled. This St. Patrick’s Day version features vibrant emerald matcha shells filled with a cannabis-infused white chocolate ganache, then half-dipped in dark chocolate for dramatic contrast. The infusion is incorporated into the ganache filling to preserve the structure and crisp texture of the shells.
A Note on Dosing
This recipe makes 20 macaron sandwiches.
Using 1.5g of 15% THC flower:
~55mg THC total (infused into ganache)
~2.5–3mg per macaron
~5–6mg per 2-macaron serving
For lighter servings:
• 1g flower → ~4mg per 2-macaron serving
• 2g flower → ~8mg per 2-macaron serving
Step 1: Cannabis-Infused Heavy Cream
Ingredients
• 1.5g cannabis flower
• 3/4 cup heavy cream
Decarboxylation
Preheat oven to 225°F (107°C).
Bake finely ground cannabis for 35–40 minutes. Cool completely.
Infusion
Warm heavy cream to 160–170°F (do not simmer).
Add decarboxylated cannabis.
Maintain low heat for 1.5–2 hours.
Strain thoroughly and chill.
This cream contains the full THC content.
Step 2: White Chocolate Ganache (Infused)
Ingredients
• 8 ounces white chocolate, chopped
• 1/2 cup cannabis-infused heavy cream
Warm infused cream gently.
Pour over chopped white chocolate.
Let sit 1 minute, then stir until smooth.
Chill until thickened but pipeable.
Step 3: Emerald Matcha Macaron Shells (Non-Infused)
Ingredients
• 1 1/2 cups powdered sugar
• 1 cup almond flour
• 2 teaspoons matcha powder
• 3 egg whites
• 1/4 cup granulated sugar
Sift powdered sugar, almond flour, and matcha.
Whip egg whites to soft peaks.
Gradually add sugar and whip to stiff glossy peaks.
Fold dry ingredients into meringue until smooth and flowing.
Pipe 1-inch rounds onto parchment-lined sheet.
Rest 30 minutes.
Bake at 300°F for 14–16 minutes.
Cool completely before filling.
Step 4: Assemble
Pipe infused ganache onto half the shells.
Top with remaining shells to create sandwiches.
Chill 1 hour to set.
Step 5: Chocolate Dip
Ingredients
• 6 ounces dark chocolate, melted
Dip half of each macaron into melted chocolate.
Place on parchment and allow to set fully.
