"Enchanted Garden" - Cannabis-Infused Cucumber, Mint & Lime Granita

A brilliantly refreshing, non-dairy frozen dessert that sparkles like crushed emeralds. This granita gets its gentle potency from a cannabis-infused simple syrup, making it a perfect, light intermezzo or a bright ending to a rich meal.


Step 1: The Decarboxylation (Activating Your Cannabis)


· Ingredients: 2 grams of a Terpinolene and Pinene-rich cannabis strain.

· Method:

  1. Preheat your oven to 240°F (115°C).

  2. Coarsely grind the cannabis and spread it on a parchment-lined baking sheet.

  3. Bake for 30-40 minutes, stirring occasionally, until dry and lightly browned. Let cool completely.


Step 2: The Cannabis-Infused Simple Syrup


· Ingredients: All of your decarbed cannabis, 1 cup water, 1 cup granulated sugar.

· Method:

  1. In a small saucepan, combine water and sugar. Heat over medium until sugar dissolves.

  2. Reduce heat to the lowest setting. Add the decarbed cannabis and steep for 20 minutes, ensuring it does not simmer.

  3. Strain through a fine-mesh sieve lined with cheesecloth into a jar. Discard solids.

  4. Let cool. This is your Cannabis-Infused Simple Syrup. You will use 1/2 cup.


Step 3: The Cucumber, Mint & Lime Granita


· Ingredients:

  · 2 large English cucumbers, peeled, seeded, and roughly chopped

  · 1/2 cup fresh mint leaves, packed

  · Zest and juice of 2 limes

  · 1/2 cup Cannabis-Infused Simple Syrup

  · Pinch of salt

  · For Garnish: Thin cucumber ribbons, fresh mint sprigs, lime zest.

· Method:

  1. In a blender, combine the chopped cucumber, mint leaves, lime zest and juice, infused syrup, and salt. Blend on high until completely smooth.

  2. Strain the mixture through a fine-mesh sieve into a 9x13 inch metal or glass baking dish, pressing on the solids to extract all liquid. Discard the pulp.

  3. Place the dish, uncovered, in the freezer.

  4. After 1 hour, use a fork to scrape and break up any ice crystals that have formed around the edges. Repeat this process every 30 minutes for about 3-4 hours, until the entire mixture is transformed into fluffy, coarse ice crystals.

  5. To serve, scrape the granita with a fork to fluff it up. Spoon into chilled glasses or bowls.

  6. Garnish with a cucumber ribbon, a mint sprig, and a sprinkle of lime zest.

  7. Consumption Note: The THC is dissolved in the syrup and evenly frozen into the crystals. The lack of fat means onset may be quicker but the effects may feel lighter and more energetic. A perfect, ethereal refresher.
