Handmade Buttermilk Chicken and Herb Dumplings

Step 1 — Decarboxylation

Ingredients

  • 3.5 grams cannabis flower (medium grind)

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Spread cannabis evenly on a parchment-lined baking sheet.
  3. Bake 35–40 minutes, stirring halfway through.
  4. Remove and allow to cool completely.

Step 2 — Cannabis Herb Butter

Ingredients

  • 1 cup unsalted butter
  • 1 cup water
  • Decarboxylated cannabis
  • 1 tbsp chopped thyme
  • 1 tbsp chopped parsley
  • 2 cloves garlic, minced

Instructions

  1. Melt butter and water together over very low heat.
  2. Stir in decarboxylated cannabis.
  3. Maintain temperature 160–180°F.
  4. Simmer gently 2 hours, stirring occasionally.
  5. Strain through cheesecloth.
  6. Refrigerate until butter solidifies.
  7. Remove butter layer and discard water.
  8. Mix softened butter with thyme, parsley, and garlic.

Step 3 — Homemade Chicken Stock

Ingredients

  • 1 whole chicken (cut into pieces)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic
  • 2 bay leaves
  • 1 tsp black pepper
  • 10 cups water

Instructions

  1. Place chicken pieces in a large pot.
  2. Add onion, carrots, celery, garlic, bay leaves, and pepper.
  3. Pour in water.
  4. Bring to a gentle boil then reduce to simmer.
  5. Simmer 1½ hours until chicken is tender.
  6. Remove chicken and shred meat.
  7. Strain broth and return to pot.

Step 4 — Homemade Buttermilk Dumplings

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 tbsp cold butter
  • ¾ cup buttermilk

Instructions

  1. Mix flour, baking powder, and salt in a bowl.
  2. Cut cold butter into flour until crumbly.
  3. Stir in buttermilk until soft dough forms.
  4. Roll dough out on floured surface to ¼ inch thick.
  5. Cut into small squares.

Step 5 — Chicken and Dumplings

Ingredients

  • Shredded chicken
  • Homemade broth
  • Dumpling dough squares
  • 1 tbsp cannabis herb butter
  • 1 tsp black pepper
  • Salt to taste

Instructions

  1. Bring chicken broth to a gentle simmer.
  2. Add shredded chicken back to pot.
  3. Drop dumpling squares into broth.
  4. Simmer 12–15 minutes until dumplings are tender.
  5. Stir in 1 tablespoon cannabis herb butter.
  6. Adjust salt and pepper.
  7. Ladle into bowls and serve hot.
