Decarboxylation Instructions:

Preheat a laboratory-grade oven or standard convection oven to 240 degrees Fahrenheit. Break the botanical material into uniform pieces and spread evenly on a parchment-lined baking sheet. Heat for 40 minutes. The material should be fragrant and light brown. Cool completely before beginning the infusion process.

Infusion Instructions:

In a double boiler over low heat, combine 1/2 cup of high-quality organic honey with the decarboxylated material. Maintain a temperature of 160 degrees Fahrenheit for 2 hours, stirring occasionally. Strain through a fine-mesh sieve or cheesecloth into a glass jar. Measure out 1/4 cup for this recipe.

Preparation Instructions:

Core and halve the apples, then slice them into paper-thin crescents using a mandoline. Place slices in a bowl with water and lemon juice; microwave for 3 minutes until pliable. Drain well. Roll out the puff pastry and cut into 6 long strips. In a small bowl, mix the apricot preserves with the infused honey. Spread a thin layer of the honey mixture onto each pastry strip. Arrange apple slices along the top half of the strip, overlapping slightly so the curved edges peek out. Sprinkle with cinnamon. Fold the bottom half of the pastry up over the apples and roll the strip tightly from one end to the other to form a rose shape. Place each rose into a greased muffin tin. Bake at 375 degrees Fahrenheit for 40-45 minutes. Allow to cool slightly before dusting with confectioners sugar.

Chef Tips:

Ensure the apple slices are translucent and flexible; if they are too thick, they will break during the rolling process. Use a silicone muffin tin for the easiest release of the delicate pastry petals.
