Honey Roasted Peanut THC Brittle

Decarboxylation
3.0 g flower @ 22–25 % THC (or 1.5 g good kief)
240 °F for 40 minutes in sealed mason jar → ~600 mg usable THC
Infusion
1½ cups (340 g) premium dark chocolate (optional for coating) + ½ tsp liquid sunflower lecithin (skip if no coating)
For direct infusion: melt ¼ cup (57 g) unsalted butter + lecithin → add decarbed material → sous-vide 185 °F for 2 hours → strain hard → 600 mg THC butter
Brittle Base
2 cups (400 g) granulated sugar
1 cup (240 ml) light corn syrup
½ cup (120 ml) water
All 600 mg THC butter (or plain butter if coating later)
2 cups (300 g) honey-roasted peanuts (salted for balance)
1 tsp baking soda
1 tsp vanilla extract
½ tsp fine salt
Steps
1. Line 9×13 sheet pan with parchment overhang → butter lightly.
2. Cook sugar + corn syrup + water in heavy pot to 240 °F (soft-ball) stirring constantly.
3. Add THC butter + peanuts → cook to 300 °F (hard-crack) stirring nonstop (color deepens to amber).
4. Remove from heat → quickly stir in baking soda + vanilla + salt (foams up dramatically).
5. Pour immediately onto pan → spread thin → cool 1 hour until hard.
6. Break into 60 irregular pieces.
Optional chocolate coat
Remelt 600 mg THC dark chocolate → dip or drizzle half the pieces → chill to set.
Storage
Airtight tin with parchment → room temp 2 months
