How to Make Infused Brown Sugar
(the caramel-depth sweetener for coffee, cookies, rubs, and elevated bakes)
Infused brown sugar adds subtle potency with rich molasses notes that mask cannabis flavor beautifully. Perfect for sprinkling, baking, or rimming cocktails – moisture in brown sugar helps even distribution.
What you need (for ~2 cups / 400 g @ 600 mg THC total)
- 3.0 g flower @ 22–25 % THC (or 1.5 g good kief/live rosin) → ~600 mg usable THC
- 2 cups (400 g) dark brown sugar (packed, fresh/soft for best absorption)
- ½ tsp liquid sunflower lecithin (for bioavailability and even binding)
Decarboxylation
240 °F for 40 minutes in sealed mason jar → cool fully → grind fine (powder consistency best).
Infusion method (long-cure for deepest flavor integration)
1. Combine decarbed material + lecithin in small jar → warm gently to 170 °F to liquify lecithin → stir well.
2. Add brown sugar → mix thoroughly (hands or fork – break lumps).
3. Seal jar → cure in warm dark place (80–100 °F) 1–2 weeks, shake daily.
Faster option: Oven low (170 °F) 2 hours in sealed jar, shake halfway.
4. Optional strain: Sift through fine mesh to remove plant material for cleaner texture (most leave in for max potency).
Results
- Color: Deep molasses brown
- Flavor: Rich caramel-toffee with subtle toasted note (brown sugar dominates)
- Texture: Slightly damper but free-flowing
- Shelf life: Indefinite airtight (brown sugar's moisture preserved)
Dosing examples
- 1 tsp ≈ 10–15 mg THC (test batch)
- Spoon in coffee = golden morning lift
- Tablespoon in cookie dough = elevated batch
Storage
Airtight glass jar → cool dark place forever
No fridge (hardens)
Pro tips
- Dark brown > light for stronger masking.
- Live rosin = cleanest (no plant bits, faster mix).
- For stronger: Higher input or less sugar volume.
- Use in: BBQ rubs, oatmeal, rimming old fashioned glasses, banana bread.
