Infused Brown Butter Cinnamon Honey Latte

A warm, cozy infused latte with toasted brown butter depth, cinnamon warmth, and sweet honey richness.

Ingredients

For Decarboxylation

  • 3.5 grams cannabis flower

For Infused Honey

  • all of the decarboxylated cannabis
  • 1/2 cup honey
  • 1 teaspoon sunflower lecithin, optional

For the Latte

  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons infused honey
  • 1 tablespoon regular honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1/2 cup strong brewed espresso or very strong coffee
  • whipped cream, optional
  • extra cinnamon for garnish

Decarboxylation Instructions

  1. Preheat the oven to 240°F.
  2. Break the cannabis flower into small pieces by hand.
  3. Spread it on a parchment-lined baking tray.
  4. Bake for 35 to 40 minutes, stirring once halfway through.
  5. Remove and let cool completely.

Infused Honey Instructions

  1. Combine the decarboxylated cannabis and honey in a heatproof jar or bowl.
  2. Stir in the lecithin if using.
  3. Place the jar over a saucepan of gently simmering water as a double boiler.
  4. Keep warm over low heat for 2 to 3 hours, stirring occasionally.
  5. Do not let it boil aggressively.
  6. Remove from heat and cool slightly.
  7. Strain through a fine mesh strainer or cheesecloth.
  8. Store in a sealed jar.

Latte Instructions

  1. Melt the butter in a saucepan over medium-low heat.
  2. Cook until it foams and turns golden brown with a nutty aroma.
  3. Add the milk, cream, cinnamon, vanilla, salt, infused honey, and regular honey.
  4. Whisk until hot and smooth, but do not boil.
  5. Add the espresso or strong coffee and whisk again until lightly frothy.
  6. Divide evenly between 2 mugs.
  7. Top with whipped cream and cinnamon if desired.

Notes

That is a strong serving. For a lighter version, reduce the infused honey in the latte and replace the rest with regular honey.
