Kansas City Burnt-End Brisket Bombs with THC-Infused Sweet & Smoky Sauce (100 mg each)


These are the final boss of the barbecue world. Perfect point-end brisket smoked 14 hours over post oak until it collapses, chopped into chunks, tossed in a sticky ruby-red sauce laced with a full gram of distillate, then sealed inside a buttery biscuit dough bomb and baked until the burnt ends try to escape like molten lava. One bomb and you’re standing in the smoke ring of Arthur Bryant’s arguing with a pitmaster about whether Gates or Joe’s has better sauce. Two bombs and you’ll wake up in a parking lot off 18th & Vine wearing a bib made of ribs and trying to pay a trumpet player with a rack of baby backs.


Makes 12 massive bombs  

Active time: 4 hours | Total time: 2 days + 21-day infusion  

Dosage: 100 mg THC per bomb (1,200 mg total in the sauce)


THC sweet & smoky sauce (1,200 mg total)  

- 3 cups Kansas City–style base (tomato, molasses, brown sugar, vinegar, the usual suspects)  

- 2 tbsp Wright’s liquid smoke  

- 1 tbsp espresso powder  

- 1 tbsp cocoa powder  

- 2 tsp chipotle powder  

- 1,200 mg flavorless distillate (warmed to 100 °F)


Reduce sauce by 30 % for extra cling. Cool to 100 °F, whisk in distillate until glossy as a ’57 Chevy. Bottle and age 21 days in the fridge. It gets darker, meaner, and more addictive with every passing day.


Burnt ends (start 24+ hours ahead)  

- 8–9 lb whole packer brisket, point and flat separated  

- Rub: ½ cup kosher salt, ½ cup coarse black pepper, ¼ cup granulated garlic, 2 tbsp paprika  

- Smoke at 225–250 °F over post oak 12–14 hours to 203 °F internal  

- Rest in butcher paper 2 hours, then cube the point into 1-inch chunks  

- Toss cubes in 2 cups of the non-infused sauce version, back on smoker 1 more hour until bark is nuclear


Bomb dough (cheater buttermilk-biscuit hybrid)  

- 5 cups AP flour  

- 2 tbsp baking powder  

- 2 tsp kosher salt  

- 1 tsp baking soda  

- 2 sticks frozen butter, grated  

- 2 cups cold buttermilk + 2 tbsp apple cider vinegar  

Cut butter into dry, add liquid, fold until just together. Rest 30 min.


Assembly  

- 4–5 oz burnt ends + extra sauce per bomb (about ½ cup total filling)  

- Flatten a hockey-puck of dough in your palm, place filling pile in center, seal completely like you’re hiding evidence.  

- Place seam-down in a greased 12-cup jumbo muffin tin or cast-iron skillet.  

- Brush tops with melted butter + extra coarse pepper.  

- Bake 400 °F 24–28 minutes until deep mahogany and threatening to explode.


Serve straight from the pan with the warm THC sauce in a squeeze bottle for extra disrespect (use every drop).
