You sent in your fails (bless the DMs and comments) – separated infusions, seized chocolate, rubbery gummies, weak potency, grassy flavor bombs. We've all been there. Here's the breakdown of the top viewer-submitted issues with straight fixes.
Infusion separated (oil floating, cloudy mess)
Cause: No emulsifier, temp swings, poor strain.
Fix: Always add ½ tsp liquid sunflower lecithin per cup fat/milk. Warm gently, constant low heat (sous-vide 185°F ideal). Rescue: Re-warm separated batch to 170°F, whisk in lecithin vigorously, chill slow.
Chocolate seized or bloomed (grainy, dull, won't temper)
Cause: Water trace, overheat, bad melt.
Fix: Use cacao butter base for infusion first (forgiving). Seed method for temper: Melt ¾, add ¼ chopped unmelted, stir off heat. Rescue: Seized batch → blend into brownies or hot cocoa (texture hidden).
Gummies didn't set or turned rubbery/weepy
Cause: Wrong gelatin ratio, too much acid early, humidity.
Fix: 4 tbsp powdered gelatin per 1½–2 cups liquid standard. Bloom cold, dissolve hot. Acid (citric) add post-pour. Rescue: Rubbery → remelt gentle, add bloomed gelatin. Weepy → dust cornstarch, dry longer.
Weak or uneven potency (hot spots, no effect)
Cause: Incomplete decarb, poor extraction, no stir.
Fix: Sealed jar decarb only. Sous-vide infusion 2+ hours. Lecithin mandatory. Lab test if scaling. Rescue: Weak batch → reduce volume (cook down), re-dose carefully.
Grassy/weedy flavor overpowering
Cause: Plant material not strained enough, high heat terp loss.
Fix: Double strain (cheesecloth + coffee filter). Mask bold: coffee, spice, citrus, mint. Rescue: Over-grassy → fold into strong flavors (mole sauce, dark chocolate, curry).

Overdecarbed (dark, nutty but sleepy CBN-heavy): Blend into sleep gummies or nightcap chocolates.
Burnt butter infusion: Start over – no saving scorched milk solids.
