Lemon Lavender THC Madeleines

Decarboxylation
1.8 g flower @ 22–25 % THC (or 0.9 g good kief)
240 °F for 40 minutes in sealed mason jar → ~360 mg usable THC
Infusion
¾ cup (170 g) unsalted European-style butter + ½ tsp liquid sunflower lecithin
Melt to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours
Strain hard → crystal-clear 360 mg THC butter
Madeleine Batter
All 360 mg THC butter, browned and cooled
3 large eggs, room temp
⅔ cup (130 g) granulated sugar
Zest of 2 lemons
1 tbsp fresh lemon juice
1 tsp dried culinary lavender, finely crushed
1 cup (120 g) all-purpose flour
1 tsp baking powder
Pinch fine salt
Powdered sugar for dusting
Steps
1. Brown THC butter: cook until nutty and golden → cool completely.
2. Whisk eggs + sugar until thick and pale (ribbon stage) → fold in lemon zest + juice + lavender.
3. Sift flour + baking powder + salt → fold gently into egg mixture → fold in cooled browned THC butter until smooth.
4. Chill batter at least 2 hours (overnight for best hump).
5. Preheat oven to 375 °F → brush madeleine pan generously with melted butter → fill molds ¾ full.
6. Bake 10–12 minutes until edges golden and centers spring back → cool 5 minutes in pan → unmold → cool on rack.
7. Dust heavily with powdered sugar while warm.
