Louisiana Crawfish Boil Cornbread Muffins with THC-Cajun Honey Butter (35 mg each)


These are the muffins you smuggle out of New Orleans in your carry-on and still smell like Zatarain’s when you land in Denver. Buttery, jalapeño-studded cornbread baked with real crawfish tail meat and a fistful of Creole spices, then brushed hot out of the oven with a sticky Cajun honey butter that’s been fortified with 420 mg of clean distillate. One muffin and you’re back on Bourbon Street at 2 a.m. arguing with a brass band about whose grandma makes better gumbo. Two muffins and you’re trying to baptize yourself in the hotel ice machine while zydeco plays in your teeth.


Makes 12 standard muffins

Dosage: 35 mg THC per muffin (420 mg total in the honey butter)


Cajun honey butter (420 mg total)  

- ½ cup (1 stick) unsalted butter, softened  

- ⅓ cup good Louisiana honey (tupelo or wildflower)  

- 1 tbsp Cajun seasoning (Tony Chachere’s or Slap Ya Mama)  

- 1 tsp cayenne (or more if you hate yourself)  

- ½ tsp kosher salt  

- 420 mg flavorless THC distillate (warmed to 100 °F so it’s pourable)


Beat butter until fluffy. Warm honey to 100 °F, stir in distillate until completely smooth, then beat into butter with seasonings. Keep at room temp until muffins come out.


Dry mix  

- 1 cup yellow cornmeal (medium grind, not fine)  

- 1 cup all-purpose flour  

- ⅓ cup granulated sugar  

- 1 tbsp baking powder  

- 1 tsp kosher salt  

- 2 tsp Cajun seasoning  


Wet mix  

- 1 cup buttermilk  

- ⅓ cup canola oil  

- 2 large eggs  

- ¼ cup finely diced pickled jalapeños (drained)  

- 1 cup cooked crawfish tail meat (roughly chopped, squeezed dry)  

- 1 cup shredded sharp cheddar  

- ½ cup finely chopped green onions


Preheat oven to 400 °F. Grease a 12-cup muffin tin real good (or use tulip liners if you’re fancy).


Whisk dry ingredients in one bowl, wet in another. Fold wet into dry until just barely combined (lumpy is good). Fold in crawfish, cheese, jalapeños, and green onions. Divide evenly (cups will be very full).


Bake 18–22 minutes until deep golden and a toothpick comes out clean. While still screaming-hot, brush the tops generously with the THC Cajun honey butter (use every last drop). Let cool 5 minutes in the pan, then turn out.


Serve warm with extra honey butter on the side and an Abita Turbo Dog you definitely didn’t pay for.
