Matcha Red Bean THC Dorayaki

Decarboxylation

What you'll need:
- Cannabis flower (use 8 grams for approximately 10mg THC per dorayaki when making 10 filled pancakes / 20 halves, assuming 15% THC flower strength—adjust based on your strain's lab test for accuracy)
- Oven
- Baking sheet
- Parchment paper
- Grinder

Steps:
1. Preheat oven to 240°F (115°C).
2. Break flower into small pieces, grind coarsely.
3. Spread evenly on parchment-lined baking sheet.
4. Bake 30-40 minutes, stir halfway.
5. Cool completely—it turns light brownish-green when ready.

Infusion (Canna-Honey)

What you'll need:
- Decarboxylated cannabis (from above)
- 1 cup honey
- Small saucepan
- Cheesecloth or fine strainer

Steps:
1. Combine honey and decarboxylated cannabis in saucepan.
2. Heat on very low (160-180°F) for 1-2 hours, stir occasionally—do not boil.
3. Cool slightly, strain through cheesecloth into container, squeeze gently.
4. This is your canna-honey.

Recipe (makes about 10 filled dorayaki)

Pancake Ingredients:
- 4 large eggs
- 2/3 cup granulated sugar
- 2 tablespoons canna-honey (from above)
- 1 tablespoon regular honey
- 1.5 cups all-purpose flour
- 2 tablespoons matcha powder
- 1 teaspoon baking powder
- 1/4 cup water (adjust for batter consistency)

Red Bean Filling Ingredients:
- 2 cups sweetened red bean paste (anko—store-bought or homemade)
- Optional: 2 tablespoons canna-honey mixed in for extra potency

Steps:
1. In bowl, whisk eggs, sugar, canna-honey, and regular honey until pale and fluffy.
2. Sift in flour, matcha, and baking powder.
3. Gently fold until combined, add water gradually to make thick but pourable batter.
4. Rest batter 15 minutes.
5. Heat non-stick pan on medium-low, lightly oil if needed.
6. Pour 2-3 tablespoons batter per pancake, cook until bubbles form on top (about 2 minutes).
7. Flip and cook another 1 minute—keep pancakes small (3-4 inches diameter).
8. Cool pancakes on rack.
9. If boosting filling, mix canna-honey into red bean paste.
10. Spread generous layer of red bean paste on one pancake, top with another to sandwich.

Each filled dorayaki contains approximately 10mg THC (based on 8g of 15% THC flower primarily in honey divided into 10 pieces; actual potency varies—start with half and wait 2 hours). The fluffy matcha pancakes and sweet red bean create classic Japanese balance. Store in airtight container at room temperature up to 2 days or fridge longer.
