Matcha Strawberry THC Shortcake  
(15 mg THC each · 12 servings · 180 mg total batch)

Fluffy matcha-scented biscuits layered with juicy strawberries and whipped cream – light, fresh, Japanese-British fusion elegance. Tastes like high tea in Kyoto, zero weed flavor.

Decarboxylation  
0.9 g flower @ 22–25 % THC (or 0.45 g good kief)  
240 °F for 40 minutes in sealed mason jar → ~180 mg usable THC

Infusion  
¾ cup (180 ml) heavy cream + ¼ tsp liquid sunflower lecithin  
Warm to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours  
Strain hard → crystal-clear 180 mg THC cream

Biscuits  
2 cups (240 g) all-purpose flour  
1 tbsp ceremonial-grade matcha powder  
1 tbsp baking powder  
2 tbsp granulated sugar  
½ tsp fine salt  
6 tbsp cold unsalted butter, cubed  
¾ cup cold buttermilk  
All 180 mg THC cream (chilled)

Strawberries  
1 lb (450 g) fresh strawberries, hulled and sliced  
2–3 tbsp granulated sugar (to taste)  
Splash lemon juice

Whipped Cream  
1½ cups cold heavy cream  
2 tbsp powdered sugar  
1 tsp vanilla extract

Steps

1. Macerate strawberries: toss slices with sugar + lemon → rest 30 minutes (juices release).

2. Biscuits: sift flour + matcha + baking powder + sugar + salt → cut in cold butter until pea-sized → mix buttermilk + THC cream → stir just until dough forms (don't overwork).

3. Pat dough ¾-inch thick → cut 12 rounds → brush tops with extra cream → bake 425 °F 12–15 minutes until golden.

4. Whip cream: beat cold cream + powdered sugar + vanilla to soft peaks.

5. Assemble: split warm biscuits → layer strawberries + juices → big dollop whipped cream → top with biscuit half → extra berries + cream + matcha dust.

Assembled → fridge 1 day max (biscuits soften)
