Matcha White Chocolate Weed Truffles

(15 mg each – pure elegance in one bite)

These are the truffles you bring to a dinner party when you want everyone to think you’re fancy as hell… and then quietly melt into the couch together. Creamy white chocolate shell, bright ceremonial matcha ganache center, and a clean 15 mg punch that feels like a soft green hug.

Makes 30 truffles · Total batch 450 mg active THC

Active THC  15 mg

Allergens: Dairy, possible Soy

Decarb & Infusion (do ahead)

- 3.2–3.4 g flower @ 20–22 % THC

- Decarb 240 °F × 40 min → ~450 mg usable

- Infuse into ¾ cup (180 ml) heavy cream at 175 °F for 2½ hours (low simmer with decarbed weed in a jar in a water bath). Strain hard, re-weigh cream and top back to exactly ¾ cup if needed → 450 mg matcha cream

Ganache Center

¾ cup (180 ml) 450 mg infused heavy cream

10 oz (280 g) best white chocolate (Valrhona or Callebaut), chopped fine

2 tbsp unsalted butter, soft

2 tbsp ceremonial-grade matcha (sifted twice)

Pinch fine sea salt

Coating

14 oz (400 g) white chocolate, tempered

Extra sifted matcha for dusting

Steps

1. Heat infused cream to just under a boil. Pour over chopped white chocolate + butter in a bowl.

2. Wait 2 minutes, then whisk from the center out until silky.

3. Sift matcha + salt over the top. Whisk until perfectly smooth and bright green.

4. Press plastic wrap directly on surface, chill 3–4 hours until firm enough to scoop.

5. Scoop with a 2-tsp melon baller or spoon → 30 rough balls. Roll quickly between cold palms into perfect spheres (wear gloves or chill hands under cold water to prevent melting). Freeze 30 minutes.

6. Temper the 14 oz coating chocolate (seed method or mycryo).

7. Dip frozen centers one at a time → tap off excess → place on parchment.

8. Before they fully set, dust tops with extra matcha using a fine sieve.

9. Let cure 15 minutes at cool room temp.

Storage

Airtight tin in fridge → 3 weeks

Freezer → 3 months (flavor peaks at 2–3 days)

Effect: clean, uplifting, no body crash. The matcha gives a gentle caffeine lift that smooths the THC ride. One truffle = happy dinner guest. Two truffles = “I love every single one of you” conversation starter. Three truffles = someone is definitely sleeping on your couch tonight.

Keep them cold until serving—they melt in your hand almost as fast as they melt your brain (in the best way).
