New Orleans Crawfish Boil Bread Pudding Bombs with THC-Infused Rémuolade Butter (120 mg each)

This is the one that finally makes Mardi Gras shut up and listen. Sweet-savory Louisiana bread pudding studded with whole crawfish tails, andouille chunks, trinity, and a violent amount of Zatarain’s, baked into softball-sized bombs, then deep-fried for a crackling shell. Right when they come out, you split the top and pour in a molten THC-rémuolade butter that’s basically liquid Cajun crack. The butter carries the full 1,440 mg payload. One bomb and you’re second-lining down St. Charles with a stranger’s baby on your shoulders. Two bombs and you’ll wake up on a shrimp boat in the Gulf wearing a crawfish bib as a cape and calling the horizon “cher.”

Makes 12 unholy bombs  
Active time: 3½ hours | Total time: 2 days + 21-day infusion  
Dosage: 120 mg THC per bomb (1,440 mg total in the rémuolade butter)

THC rémuolade butter (1,440 mg total)  
- 1 lb (4 sticks) unsalted butter, clarified to 100 % fat  
- ½ cup Duke’s mayo (for body)  
- ¼ cup Creole mustard  
- 3 tbsp prepared horseradish  
- 3 tbsp lemon juice  
- 2 tbsp hot sauce (Crystal)  
- 2 tbsp Worcestershire  
- 1 tbsp paprika  
- 2 tsp cayenne  
- 6 cloves garlic, minced to paste  
- ¼ cup finely minced cornichons + capers  
- 1 bunch parsley, minced  
- 1,440 mg flavorless distillate (warmed to 105 °F)

Bloom spices in ½ lb of the butter, cool to 105 °F, whisk in distillate, then fold in remaining cold butter and all other ingredients. Rest 21 days in the fridge. Reheat gently to pouring temperature before service.

Crawfish boil bread pudding (make the day before)  
- 2 lb stale French bread, cubed  
- 2 lb peeled crawfish tails (Louisiana, never Chinese)  
- 1 lb andouille, diced and browned hard  
- 2 cups trinity (onion, celery, bell pepper), fine dice  
- 8 eggs  
- 4 cups half-and-half  
- 2 cups shredded pepper jack  
- ¼ cup Zatarain’s crab boil seasoning (dry shake)  
- 2 tbsp Cajun seasoning  
- Hot sauce to taste

Soak bread in egg-cream mixture overnight with everything else mixed in. Pack into greased hotel pans, bake 350 °F 45–50 min until just set. Cool completely, then scoop into 12 equal portions (about 6–7 oz each).

Bomb assembly  
Roll each chilled pudding portion into a tight ball.  
Standard vetkoek/fry-bread dough:  
- 5 cups AP flour, 2 tsp salt, 2 tbsp sugar, 2¼ tsp instant yeast, 1¾ cups warm water, ¼ cup softened butter  
Knead smooth, bulk ferment 90 min.  
Divide into 12 pieces, flatten, wrap completely around a pudding ball, seal tight. Proof 45 min.

Fry at 350 °F 6–7 minutes until deep mahogany and floating like a jazz funeral. Drain 20 seconds.

Service  
Place each bomb in a paper boat, slice an X in the top, pry open, and pour 2 oz of the hot THC rémuolade butter straight into the molten center. Garnish with green onion and a single crawfish tail wearing a tiny crown.

120 mg per bomb.  
Eat one and you’ll throw beads at your own reflection.  
Eat two and you’ll wake up in the Mississippi River holding a trombone and proposing marriage to a pelican.
