Passion Fruit Pavlova THC Meringues  
(10 mg THC each · 40 meringues · 400 mg total batch)

Crisp outside, marshmallow-soft inside, topped with tart passion fruit curd and a dusting of freeze-dried passion fruit powder. Zero weed taste, pure tropical elegance.

Decarboxylation  
2.0 g flower @ 22–25 % THC (or 1.0 g good kief)  
240 °F for 40 minutes in sealed mason jar → ~400 mg usable THC

Infusion  
½ cup (113 g) unsalted butter + ½ tsp liquid sunflower lecithin  
Melt to 170 °F → add decarbed flower → sous-vide 185 °F for 2 hours  
Strain hard → crystal-clear 400 mg THC butter

Passion Fruit Curd (makes ~1½ cups)  
½ cup (120 ml) fresh or frozen passion fruit purée  
¾ cup (150 g) granulated sugar  
3 large egg yolks  
All 400 mg THC butter, cubed and cold  
Pinch salt

Meringue  
4 large egg whites (120 g)  
1 cup (200 g) superfine sugar  
1 tsp white vinegar  
1 tsp cornstarch  
½ tsp vanilla bean paste

Steps

1. Make curd: Whisk purée, sugar, yolks in bowl over simmering water until 170 °F and thick → remove from heat → whisk in cold THC butter one cube at a time → strain → chill completely.

2. Meringue: Preheat oven to 225 °F. Line two trays with parchment.  
   Whip whites to soft peaks → rain in sugar 1 tbsp at a time → whip to stiff glossy peaks → fold in vinegar, cornstarch, vanilla.

3. Pipe or spoon 40 small nests (2-inch base with slight well in center).

4. Bake 75–90 minutes until crisp outside → turn oven off → leave inside with door cracked 1 hour.

5. Fill each cooled nest with 1 tsp passion fruit THC curd → dust with freeze-dried passion fruit powder.

Storage  
Airtight tin with parchment between layers → 5 days room temp  
Fridge → 10 days (crispness softens after day 3)

Dosing  
400 mg ÷ 40 = 10 mg exact per meringue  
One = light tropical lift  
Two = you’re on vacation without leaving the couch

Crispy, airy meringue melts into bright, tangy passion fruit with that buttery THC richness underneath.  
These disappear faster than anything else we make; people eat them like popcorn.
