Pistachio Baklava THC Bites

Decarboxylation

What you'll need:
- Cannabis flower (use 8 grams for approximately 10mg THC per bite when making 40 pieces, assuming 15% THC flower strength—adjust based on your strain's lab test for accuracy)
- Oven
- Baking sheet
- Parchment paper
- Grinder

Steps:
1. Preheat oven to 240°F (115°C).
2. Break flower into small pieces, grind coarsely.
3. Spread evenly on parchment-lined baking sheet.
4. Bake 30-40 minutes, stir halfway.
5. Cool completely—it turns light brownish-green when ready.

Infusion (Canna-Butter)

What you'll need:
- Decarboxylated cannabis (from above)
- 1 cup (2 sticks) unsalted butter
- Saucepan or double boiler
- Cheesecloth or fine strainer

Steps:
1. Melt butter on low heat.
2. Add decarboxylated cannabis.
3. Simmer 2-3 hours at 160-200°F, stir occasionally.
4. Cool slightly, strain through cheesecloth into container, squeeze gently.
5. Refrigerate until solid.

Recipe (makes about 40 small bites)

Phyllo Layers Ingredients:
- 1 package phyllo dough (thawed)
- 3/4 cup canna-butter (from above), melted

Filling Ingredients:
- 3 cups raw pistachios, finely chopped
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom

Syrup Ingredients:
- 1 cup granulated sugar
- 3/4 cup water
- 1/2 cup honey
- 1 tablespoon lemon juice
- 1 teaspoon rose water (optional)

Steps:
1. Preheat oven to 350°F. Butter a 9x13 baking dish.
2. Mix chopped pistachios, sugar, cinnamon, cardamom in bowl.
3. Lay one sheet phyllo in dish, brush lightly with melted canna-butter. Repeat for 10 sheets.
4. Spread half the pistachio filling evenly.
5. Layer another 8-10 sheets phyllo, brushing each with canna-butter.
6. Spread remaining filling.
7. Top with another 10-12 sheets phyllo, brushing each.
8. Brush top generously with canna-butter.
9. Cut into small diamonds or squares (about 1-inch pieces) before baking—do not cut all the way through bottom.
10. Bake 45-50 minutes until golden and crisp.
11. While baking, make syrup: Combine sugar, water, honey, lemon juice in saucepan. Bring to boil, reduce to simmer 10 minutes. Remove from heat, add rose water if using.
12. Remove baklava from oven, immediately pour warm syrup evenly over hot pastry.
13. Let cool completely (several hours or overnight) for syrup to absorb.
14. Finish cutting into 40 bites.

Each bite contains approximately 10mg THC (based on 8g of 15% THC flower divided into 40 pieces; actual potency varies—start with half a bite and wait 2 hours). The flaky layers, nutty pistachio, and sticky honey syrup make these an elevated treat. Store in airtight container at room temperature up to 1 week or fridge longer.
