"Serene Sunset" - Cannabis-Infused Tropical Coconut & Pineapple Sorbet

A refreshing, dairy-free, and vibrantly flavored frozen dessert. This sorbet offers a sweet, tropical escape with a smooth, calming infusion, perfect for capping off a romantic meal with a light and uplifting note.

Step 1: The Decarboxylation (Activating Your Cannabis)

· Ingredients: 3 grams of a tropical or citrus-forward cannabis sativa strain.
· Method:
  1. Preheat your oven to 240°F (115°C).
  2. Coarsely grind the cannabis and spread it on a parchment-lined baking sheet.
  3. Bake for 30-40 minutes, stirring occasionally, until dry and lightly browned. Let cool completely.

Step 2: The Cannabis-Infused Coconut Milk

· Ingredients: All of your decarbed cannabis, 1 (13.5 oz) can full-fat coconut milk.
· Method:
  1. In a small saucepan, combine the coconut milk and decarbed cannabis.
  2. Heat over the lowest possible setting for 45 minutes, stirring frequently. Do not let it boil; maintain a temperature where it just barely steams.
  3. Remove from heat and carefully strain through a cheesecloth-lined fine mesh strainer into a bowl, pressing firmly on the cannabis to extract all the creamy liquid. Discard the plant material.
  4. Cover and refrigerate this Cannabis-Infused Coconut Milk until completely cold, at least 2 hours. You will use all of it.

Step 3: The Tropical Coconut & Pineapple Sorbet

· Ingredients:
  · All of the chilled Cannabis-Infused Coconut Milk
  · 2 cups fresh pineapple, chopped and frozen
  · 1/3 cup agave nectar or honey (adjust to taste)
  · Zest and juice of 1 lime
  · A pinch of salt
  · For Garnish: Toasted coconut flakes, fresh mint.
· Method (Using an Ice Cream Maker):
  1. In a high-speed blender, combine the chilled infused coconut milk, frozen pineapple, agave nectar, lime zest and juice, and salt.
  2. Blend on high until completely smooth and creamy.
  3. Churn the mixture in your ice cream maker according to the manufacturer's instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
  4. Transfer to a freezer-safe container, press parchment paper onto the surface, and freeze for at least 4 hours to firm up.
· Method (No-Churn):
  1. Blend all ingredients as above until smooth.
  2. Pour into a shallow, freezer-safe dish. Freeze for 1 hour.
  3. Remove and whisk vigorously to break up ice crystals. Repeat this process every 30 minutes for about 3-4 hours until uniformly frozen.
  4. Let it sit at room temperature for 5-10 minutes before scooping.
  5. Dosage Note: This recipe makes about 4 servings. One serving is approximately 1/2 cup. The THC is evenly distributed throughout the sorbet. Start with a modest scoop and wait at least 90 minutes to assess effects. The fat in the coconut milk ensures good bioavailability.
