Smothered Cajun Chicken with Cannabis-Infused Onion Gravy

This dish follows that tradition: seared chicken, a dark onion gravy, and rich spice that clings to every bite. Step 1 — Decarboxylation

Ingredients

  • 3.5 grams cannabis flower (medium grind)

Instructions

  1. Preheat oven to 240°F (115°C).
  2. Line a baking sheet with parchment paper.
  3. Spread ground cannabis evenly across the parchment.
  4. Bake for 35–40 minutes, gently stirring halfway through.
  5. Remove and allow to cool completely.

Step 2 — Cannabis-Infused Butter

Ingredients

  • 1 cup unsalted butter
  • 1 cup water
  • Decarboxylated cannabis

Instructions

  1. In a small saucepan combine butter and water over very low heat.
  2. Once melted, add the decarboxylated cannabis.
  3. Maintain temperature between 160–180°F (never boiling).
  4. Simmer gently for 2 hours, stirring occasionally.
  5. Strain through cheesecloth into a container.
  6. Refrigerate until butter solidifies.
  7. Remove the butter layer and discard water.

Step 3 — Smothered Cajun Chicken

Ingredients

  • 4 bone-in chicken thighs
  • 2 tbsp flour
  • 2 tbsp cannabis butter
  • 1 tbsp regular butter
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1½ cups chicken stock
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • ½ tsp black pepper
  • ½ tsp thyme
  • Salt to taste

Instructions

  1. Season Chicken
    Coat chicken thighs with Cajun seasoning, paprika, thyme, and black pepper.

  2. Sear
    Heat a cast-iron skillet over medium-high heat.
    Add regular butter and sear chicken 4–5 minutes per side until golden.

  3. Remove Chicken
    Set aside but keep drippings in the skillet.

  4. Cook Onions
    Add sliced onions and cook slowly for 8–10 minutes until caramelized.

  5. Add Garlic
    Stir garlic and cook 30 seconds.

  6. Make Gravy Base
    Sprinkle flour into the skillet and whisk with the onions for 1 minute.

  7. Add Stock
    Slowly whisk in chicken stock until smooth.

  8. Add Infusion
    Stir in 2 tablespoons cannabis butter.

  9. Return Chicken
    Nestle chicken back into the gravy.

  10. Simmer
    Cover and cook 20–25 minutes until chicken is tender and gravy thickens.
