Sparkling Pomegranate Canna-Mocktails with Lime

Recipe Info

Yield: 2 Servings

Prep time: 10 minutes

Difficulty: Easy

Service Temperature: 35°F to 38°F

Terpene Pairing

Caryophyllene: This spicy, peppery terpene provides a sophisticated bridge between the tart pomegranate juice and the bright acidity of the lime, adding depth to the non-alcoholic profile.

Dosage Information

This recipe uses 10mg of water-soluble cannabis tincture per serving, for a total of 20mg. Water-soluble tinctures are recommended for sparkling beverages to ensure even distribution and clarity of the liquid.

Ingredients List

1 cup 100% pure pomegranate juice, chilled

2 cups lime-flavored sparkling mineral water

2 tablespoons fresh lime juice

20mg water-soluble cannabis tincture

1/4 cup fresh pomegranate arils (seeds)

4 thin organic lime wheels

Fresh mint sprigs for garnish

Crushed ice

Decarboxylation Instructions

Preheat oven to 240°F. Break cannabis flower into small pieces and place on a parchment-lined baking sheet. Heat for 40 minutes. This process is required if you are manufacturing your own tincture base to ensure the THCA is fully converted to THC.

Infusion Instructions

If creating a water-soluble base at home, combine decarboxylated flower with high-proof vegetable glycerin or a food-grade emulsifier carrier. Process in a temperature-controlled water bath at 160°F for 4 hours. Strain through a 200-micron filter to ensure a clear final product.

Preparation Instructions

Chill two highball glasses in the freezer for 10 minutes.

Fill each chilled glass halfway with crushed ice.

Divide the fresh pomegranate arils and two lime wheels between the two glasses, tucking them into the ice for visual appeal.

In a small measuring pitcher, combine the pomegranate juice, fresh lime juice, and the cannabis tincture. Stir gently to integrate.

Pour the pomegranate mixture evenly over the ice in both glasses.

Top each glass with the lime-flavored sparkling mineral water. Stir very briefly with a long bar spoon to combine the layers without dissipating the carbonation.

Garnish each glass with a fresh mint sprig and an additional lime wheel.

Chef Tips

For a layered "ombré" effect, pour the sparkling water into the glass over the ice first, then slowly pour the pomegranate and tincture mixture over the back of a spoon so it settles at the bottom. Use 100% pomegranate juice rather than a blend to maintain the deep ruby color and antioxidant-rich flavor profile.
