SPICY GINGER & PLUM SHRUB 🍑🔥
A traditional tavern tonic with a sharp, vinegary bite that is perfectly balanced by the mellow sweetness of winter plums and the creeping heat of fresh ginger. This "shrub" (a fruit and vinegar syrup) is an old-world method of preserving fruit that results in a complex, refreshing, and deeply flavorful drink that aids digestion and warms the throat.

CHEF TIPS:
The Quick Shrub: If you don't have a shrub ready, muddle 2 ripe plums, 1 tsp grated ginger, 1 tbsp sugar, and 1 tbsp apple cider vinegar. Let sit for 10 minutes, then strain.
The Heat: For more "tavern fire," use a high-quality, spicy ginger beer instead of sparkling water.
The Plum: Red or black plums work best for this recipe as they provide a beautiful, deep garnet color and a rich, jammy flavor.
Serve immediately. Enjoy the Spicy Ginger & Plum Shrub responsibly 🍑🔥
