Warm to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours

Gummy Base
All 500 mg THC limoncello infusion
½ cup (120 ml) fresh lemon juice
¾ cup (150 g) granulated sugar
¼ cup (80 g) light corn syrup
3 tbsp powdered gelatin (or 20 g agar powder for vegan)
Zest of 2 lemons
Pinch fine salt
Steps
1. Bloom gelatin in ¼ cup cold lemon juice for 10 minutes.
2. Warm THC limoncello infusion + remaining lemon juice + sugar + corn syrup + zest + salt to 160 °F → whisk in bloomed gelatin until dissolved.
3. Heat gently to 230 °F (soft-ball stage) while stirring → remove from heat → strain out zest if desired.
4. Pour into 10–15 ml molds (20 cavities) → tap to release bubbles → chill 1 hour → unmold.
5. Optional sugar coat: toss in granulated sugar mixed with citric acid for extra tart sparkle.

Airtight jar → 1 month room temp
