Decarboxylation

240 °F for 40 minutes in sealed mason jar → ~600 mg usable THC
Infusion
¾ cup (180 ml) good bourbon or rye whiskey + ½ tsp liquid sunflower lecithin
Warm to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours
Strain hard → crystal-clear 600 mg THC whiskey
Cherry Prep
30 large fresh cherries (pitted, stems on for handle)
All 600 mg THC whiskey
2–3 dashes Angostura bitters
1 tbsp demerara sugar
Zest of 1 orange
Chocolate Shell
16 oz (450 g) premium dark chocolate (64–70%), tempered
Optional: extra orange zest or coarse sugar for rolling
Steps
1. Soak cherries: combine THC whiskey + bitters + sugar + orange zest → add pitted cherries → refrigerate 24–48 hours (longer = boozier).
2. Drain cherries well → pat dry → freeze on tray 1 hour (prevents bleeding).
3. Temper chocolate → dip frozen cherries fully (hold stem) → tap excess → set on parchment.
4. Optional roll wet chocolate in orange zest or coarse sugar → chill to set.
