INGREDIENTS:

 * 4-6 oz chilled sparkling water

 * Fresh ice

 * Garnish: A fresh thyme sprig and a dehydrated lemon wheel

INSTRUCTIONS:

 * In a highball glass or a mixing glass, combine the thyme-infused syrup, fresh lemon juice, and the cracked black pepper.

 * Add the cannabis tincture (10mg) and stir well to combine the flavors and ensure the tincture is distributed.

 * Fill the glass with fresh ice cubes.

 * Top with chilled sparkling water.

 * Stir gently from the bottom up to integrate the syrup without losing the carbonation.

CHEF TIPS:

Thyme Syrup: Simmer 1 cup water, 1 cup sugar, and 5-6 large thyme sprigs for 5 minutes. Let it steep until cool, then strain.

Black Pepper: Always use freshly cracked pepper. Pre-ground pepper lacks the volatile oils and "pop" needed to stand up to the lemon and thyme.

Sparkling Water: Use a high-mineral sparkling water (like Topo Chico) to add an extra layer of crispness to the savory notes.
