Ube Coconut THC Macarons
(20 mg THC each · 20 sandwiched macarons · 400 mg total batch)

Decarboxylation
2.0 g flower @ 22–25 % THC (or 1.0 g good kief)
240 °F for 40 minutes in sealed mason jar → ~400 mg usable THC
Infusion
½ cup (113 g) unsalted butter + ½ tsp liquid sunflower lecithin
Melt to 170 °F → add decarbed material → sous-vide 185 °F for 2 hours
Strain hard → crystal-clear 400 mg THC butter
Ube Macaron Shells (40 shells = 20 macarons)
100 g almond flour
100 g powdered sugar
75 g egg whites (aged overnight if possible)
100 g granulated sugar
35 g egg whites
1 tsp ube extract (or 2 tbsp ube powder + purple food color)
Pinch fine salt
Coconut Filling
All 400 mg THC butter, room temp
1½ cups (180 g) powdered sugar
1 cup (80 g) shredded unsweetened coconut, toasted
2 tbsp coconut cream
½ tsp vanilla bean paste

Steps
1. Sift almond flour + powdered sugar twice → set aside.
2. Make meringue: whip 75 g egg whites + salt to soft peaks → gradually add granulated sugar → whip to stiff glossy peaks → add ube extract/color → whip 10 seconds.
3. Macaronage: fold dry mix into meringue in thirds → add remaining 35 g egg whites → fold until lava-like (ribbon falls and disappears in 10–15 seconds).
4. Pipe 1½-inch rounds on parchment or silicone mat → tap firmly → rest 30–60 minutes until skin forms.
5. Bake 300 °F for 14–16 minutes (feet form, tops matte) → cool completely.
6. Filling: beat THC butter + powdered sugar until fluffy → fold in toasted coconut + coconut cream + vanilla + salt.
7. Pair shells by size → pipe filling on one → sandwich gently.
